My career has been built around championing Scottish ingredients through restaurants, teaching and storytelling. KIN brings all of that together in a way that feels personal & authentic. Many of the dishes are inspired by flavours and recipes I grew up with, reinterpreted through my own experiences. Smoked fish, shellfish, oats and root vegetables are flavours that instantly remind me of Scotland and of my own upbringing. Seafood is especially important to me. The menu at KIN celebrates Scotland’s natural larder, seafood, beef, game, dairy and smoked products presented in a modern way that still respects tradition.”
